Lemon Herb Cauliflower Rice
1 head cauliflower, cut into florets
2 cloves garlic, chopped
2 tablespoons lemon juice
1/4 cup chopped fresh basil, dill, or parsley
1/4 cup chopped almonds, and/or raisins (optional)
Grate cauliflower or pulse in a food processor until it resembles rice.
Add 2 tablespoons water and “riced” cauliflower to a skillet. Cook for 8 minutes. Add garlic and cook for an additional 2 minutes. Add additional water if needed to prevent sticking.
Remove from heat and stir in lemon juice and herbs. If desired, stir in chopped almonds and/or raisins.
